let's make veggie loaded deep dish pizza!

HEEEYYY YOOOUUUU GUUUYSSS!!! (preferably, to be read in the voice of chunk)

This is actually the most amazing pizza I have ever eaten in my entire life, ever, ever, ever, ever. Hands down. No questions asked. This is also the first time I have ever had deep dish pizza! Boy, was I missing out or what?!




We have officially dubbed friday night, "pizza night". It's a new tradition that I'm very excited about!
I'm going to be experimenting with fun and healthy pizza recipes. I already have so many ideas buzzing around in my head for different ethnic inspired pizzas. Pizza pizza pizza!

This recipe whips up in a jiffy and you can have an (almost) completely homemade dinner. That's what I'm talking about!

Whole-wheat Veggie Deep Dish Pizza with Roasted Garlic (makes 2 large pizzas)
  • Pizza dough 
  • Pizza sauce 
  • 1 large zucchini, thinly sliced
  • 2 roma tomatoes, sliced
  • 1 large onion, sliced
  • 1 head of garlic
  • 1 cup sundried tomatoes, roughly chopped
  • daiya cheese of choice
  • fresh basil

To start, make your pizza dough. This recipe is my absolute favourite. It is so easy and completely fool proof. It makes delicious fluffy yet crispy dough every single time. Yum!

Next, make your pizza sauce! (alternatively you can use store bought stuff, but you're really missing out). Recipe for the best pizza sauce you have ever tasted in your entire life can be found right here!


Now, roast your garlic. Peel head of garlic, toss in oil, place in small oven-safe ramekin, cover with tinfoil and roast at 350 until golden. Remove and set aside.

Caramelize your onions. Heat oil in small pan on medium heat. Add onions and saute until perfectly caramelized.

When dough has doubled, punch down and divide into two equal parts. Roll out into a circle on a lightly floured surface. Lightly grease a cast iron skillet or pie dish and line it with your dough, coming up around the edges. Allow that to rest for 15 minutes or so, while you prepare your veggies. 

Layer as follows: cheese, generous amount of pizza sauce, more cheese, veggies and roasted garlic. 

Heat oven to 450 degrees and place rack in lowest position. Slide cast iron pizza in and cook for about 10-15 minutes, or until the edges are browning. Remove from oven and let sit for about 5-10 minutes to cool (if you can wait that long!!).

Sprinkle with fresh basil and devour an entire pizza by yourself, I dare you.
