Yesterday was "Pizza Friday" at the Cameron-Tingstad residence! Who knew that friday's could get any better? I sure didn't. We love thai food around here, so why not make a thai-inspired pizza? That's exactly what we did and it turned out great! I have so many more ideas for so many more pizzas that I can barely handle it all. Also, peanuts on pizza?!?! We have all been missing out for way too long. It's so good!
Whole Wheat Pizza Dough (makes 2 large pizzas)
Thai Red Curry Pizza Sauce
- 1 796 ml can of diced tomatoes, drained
- 1 400 ml can of coconut milk
- 1 Tbsp red curry paste
- 3 cloves garlic, minced
- 1 inch cube ginger, finely minced
- 1/2 Tbsp agave
- 1/2 Tbsp coconut oil for frying
To make the sauce add coconut oil to a pan and heat on medium. Add curry paste and garlic and mix until fragrant. Add can of drained tomatoes, coconut milk, agave and ginger. Bring to a boil and then reduce heat and let simmer until majority of liquid has evaporated, mixing occasionally. Transfer to a blender and process until smooth. Return to pan and let simmer until ready to use.
Thai Red Curry Pizza (makes 2 large pizzas)
- 1/2 small head cauliflower, chopped into flat bite sized pieces
- 3 carrots, julienned
- 1 small zucchini, julienned
- 1 red pepper, julienned
- 1/2 head of onion, sliced
- 1/2 cup peanuts
- large handful fresh cilantro
- daiya cheese (mozzarella)
- 1 tsp turmeric
- 1/2 Tbsp coconut oil
- lime wedge (optional)
Preheat oven to 450 degrees.
To begin, caramelize your onions! Add coconut oil to a small pan and heat on medium. Add turmeric and mix until fragrant. Add onions and saute until soft. Set aside.
When dough is ready, roll out onto a floured pizza stone or a lightly greased pan.
Layer pizza as follows: generous amount of your thai red curry pizza sauce, cheese, mountain of vegetables, peanuts.
Bake for about 10-15 minutes, or until edges are browning.
Top with fresh cilantro and devour!
I even squeezed some fresh lime juice on top for something extra special.
