let's make quinoa glory bowls with a sriracha tahini dressing!

hello all you beautiful people!

I'm actually obsessed with this glory bowl! Sooo delicious! Is it becoming apparent that I love beets around here? It was quick to whip up, super filling, healthy, and of course delicious.


 Vegan, Gluten-free Quinoa Glory Bowl with a Sriracha Tahini Dressing (serves 2+)

  • 1 cup quinoa
  • 1/2 small napa cabbage, shredded
  • 1/2 a cucumber, chopped into bite-sized chunks
  • 1 large avocado, halved & sliced
  • 2 beets, shredded 
  • handful cherry tomatoes, halved
  • 1/2 package extra firm tofu, cubed
  • coconut oil for frying
  • lime wedge


    Sriracha Tahini Dressing 
    • 1 Tbsp tahini
    • 1 Tbsp Sriracha (less if you don't like spicy!)
    • 2 Tbsp Braggs
    • 1 & 1/2 Tbsp lemon juice
    • 1 tsp agave
    • 2 cloves garlic
    • 1 Tbsp olive oil
    • 1 Tbsp water
    • Salt + pepper to taste
    For the dressing, combine all ingredients in a food processor and process until smooth!

    To start, cook your quinoa. Add 1 cup uncooked quinoa with 2 cups water in a pot and bring to a boil. Once boiling, cover and turn heat to low. Cook until all water is absorbed and quinoa is fluffy! (About 15-20 minutes)

    In small frying pan heat a small dollop of coconut oil on medium. Add tofu cubes and fry until crispy on the outside. If you'd like you can squirt a little braggs in the pan. If not, they are good as is too! 

    Prepare all your veggies!

    In a big bowl, layer quinoa, veggies and dressing. You're done! That was easy....

    Squeeze lime wedge on top and devour!
