let's make nori wraps!

hello hello!

I'm not one for eating the same thing every day (unless it's a curry soup). I get bored easily - that's one of the reasons why I don't like cooking too much food and having left overs. I'm really bad at eating them! I'm guilty, what can I say.

This meal is nice because it's so versatile - it changes based on what you have in your fridge. Have some zucchini? Chuck that in. Some sweet potato? Perfect. This time I made a spicy tahini mayo as a sauce!

Also, did you know that including seaweed and other sea vegetables in your diet is super good for you? Just one sheet of nori contains up to 70% of your daily iodine and 20% of your daily Vitamin A, and if you ask me, thats Awesome (Vitamin A ...Awesome..)

For these nori wraps this is what you need:
  • nori sheets 
  • avocado
  • red pepper
  • carrot
  • cucumber
  • sprouts
For the spicy tahini sauce:
  • 1 Tbsp vegenaise
  • 1/2 tsp - 1 tsp sriracha (depending on how spicy you want it!)
  • 1 tsp tahini
  • 1 tsp apple cider vinegar
Combine above ingredients in food processor or by hand.

Here's what you do! Julienne your veggies. Line your nori wrap. Drizzle sauce. Roll. Eat. It's really that easy.
