Okay, I'll admit it. This is the first time I've eaten collard greens. They've just never been a staple in my house. I wanted to use them as a wrap, but I wasn't sure if I was going to like them as they do have a stronger taste. I made a spicy peanut sauce to complement them and they were delicious!
This is all you need for the wraps:
- collard greens
- red onion
- yellow pepper
For the spicy peanut sauce:
- 1 tbsp peanut butter
- 1 tbsp vegenaise
- 1/2 tbsp sriracha (or to taste)
To make the sauce, combine all ingredients in a bowl and mix until creamy.
I cut the really hard stem off the bottom of my collard greens. Slice your veggies, line your wrap, smother in peanuty goodness, wrap, enjoy! I obviously topped mine with some hemp hearts because I'm obsessed.
