If you love beets as much as I do, then you are going to love these! Beet burgers are probably one of my favourite types of veggie burgers. It's a nice change from a bean based burger, which is what a lot of veggie burgers consist of. Beans & I have a fickle relationship.
Beets are super good for you too! Your cardiovascular system loves them. Seriously.
This is all you need (makes 6 large burgers):
- 1 small onion
- 1 clove of garlic
- 1 & 1/4 cup cooked quinoa
- 1 heaping cup shredded beet
- 1/2 cup corn
- 1/2 - 3/4 cup fine breadcrumbs
- 1/2 tsp salt
- 1 + tsp cracked pepper
- drizzle oil
Roughly chop up one small onion & one clove of garlic. Add to food processor with corn & pulse until finely chopped. Next, add shredded beet, cooked quinoa, and salt & pepper to processor - pulse until well combined (be sure not to over process!). Remove from food processor and mix in breadcrumbs. It should resemble ground beef. Refrigerate as long as possible, at least 45 minutes.
Heat some oil on a non stick or cast iron pan. Form patties with hands & add to oil. Cook for approximately 10 minutes, flipping occasionally.
Top burger with whatever your heart desires! We ate ours on ciabatta buns with vegenaise, dijon mustard, tomato, onion, avocado, and sooo many sprouts!
