let's make apple pie spiced granola!


I've never really been a granola girl, not sure why. But, I love cereal. That's probably why I love this granola! Clusters of oats and apple meld together to make crunchie delicious bite sized pieces. Mmmmmm! I can't take any credit for this amazing recipe though, as it was ALL daniel!!

Bonus: your house is going to smell ah-mazing!

This is all you need:

  • 4 cups oats
  • 1/3 cup almonds
  • 1/3 cup pecans
  • 1/3 cup walnuts
  • 1/4 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/4 cup flax seeds
  • 1 Tbsp cinnamon 
  • 1/4 tsp nutmeg
  • 1 cup dried apple
  • 3 Tbsp coconut oil
  • 1/3 cup honey (or agave)
  • 1 1/2 cup apple sauce

To start, preheat oven to 275 degrees. Combine all dry ingredients in a large bowl. Next, in a small saucepan boil the coconut oil and honey. When combined, add applesauce and let simmer a couple of minutes. Add this mixture to your bowl of dry ingredients. Mix well and then line a baking sheet with parchment paper. Spread mixture evenly on baking sheet. Bake for 15 minutes. Mix. Bake additional 10-15 minutes or until lightly browned.

Note: For our applesauce we made it fresh in our vitamix. To do this, all you have to do is puree 2-3 apples - use plunger as necessary. 

We topped our granola with fresh raspberries (from the Tingstad's garden!), dates, and homemade almond milk.
