let's make roasted leek & potato soup!


I love soup. Absolutely loooooove soup! Always have, always will. Daniel never used to like soup, but boy have I turned him around. This is one of my new all time favourites - and it's so easy!

To make roasted leek and potato soup all you need is:
  • 3 potatoes
  • 3 leek stalks
  • 1 celery stalk
  • 1 clove garlic 
  • approx. 1 cup milk alternative of choice
  • drizzle oil of choice
  • salt & pepper

Preheat your oven to 350 degrees.

Chop up the leeks, potato, celery and garlic. Place in baking dish, drizzle with oil, crack some salt and pepper on top. Mix. Cover with aluminum and bake for approx. 30 minutes or until potatoes are soft. 

Place baked veggies in your vitamix and top with about 1 cup milk of choice. Turn your vitamix on to soup setting & let it do it's thing! (if you dont have a vitamix, you could always use a regular blender, or an immersion blender, and then heat on your stovetop)

I topped my soup off with some hemp hearts & fried tortilla crisps. 

Mmmm mmm mmm!
