let's make pesto pasta with roasted beets & tomatoes!

hello hello!

Tonight I created one of my new favourite meals! Soba noodles drenched in pesto & topped with roasted beets and tomatoes. Ah-mazing!

First off, I made avocado pesto. You can find the recipe here! You wont regret this.

Now for the rest all you need is (serves 2):
  • one bunch soba noodles
  • 1 large beet
  • 2 tomatoes
  • drizzle olive oil
  • 1 clove of garlic
  • salt & pepper

Preheat your oven to 350 degrees. 

Chop up one beet and two tomatoes & place into a baking dish.  Add one clove of crushed garlic and drizzle with olive oil. Mix. Cover with tin foil and bake for about half an hour or until just about tender. Remove tin foil and let bake an additional 10 minutes or so. 

Meanwhile, cook your soba noodles. Bring a pot of water to boil and add noodles. Soba noodles dont take long to cook - about 4 minutes or so. Drain & rinse.

Mix noodles with pesto & top with roasted veggies! The extra juices at the bottom of the pan are delicious. Slurp some with a spoon, smile, and drizzle on top of pasta.

Now, om nom nom!

(On a side note, whenever I cook with beets, I always feel like I am cleaning up a crime scene, does anyone else feel me?)
