let's make curry soup...in the vitamix!

Recently I made some delicious curry soup in my brand new vitamix. It was so easy and so delicious! I am absolutely obsessed with my vitamix. Pretty sure I have been living off of a liquid diet these past few days because I can't get enough smoothies & soups! 

This is all you need (serves 2+):
  • 1 can of coconut milk
  • 1 cup of vegetable broth
  • 1 stalk of celery
  • 1 & 1/2 tomatoes
  • 1 Tbsp curry paste (red or green)
  • 2 cloves of garlic
  • 1 handful of fresh cilantro 
  • 1 Tbsp fresh lemon juice
  • some tofu
  • 1/3 onion
  • 1 red pepper 
  • 1 cup lotus root chopped
  • 1 bunch enoki mushrooms
  • 1 small seeded jalepeno (optional!)

To start, add some oil to a pan and heat on medium. Roughly chop 1/3 of an onion and add to oil. Cube some tofu and add to pan.

Meanwhile, fill your vitamix with the coconut milk, veggie broth, celery, 1 tomato, curry paste, lemon juice, garlic, cilantro & jalepeno if you're using it (save some cilantro for garnish!). If you have the new vitamix, put it to the soup function and start! (if not, start low and slowly increase to high and let run for about 4 - 5 minutes).

While the vitamix is running, slice up the lotus root and add to pan of tofu/onions.

When the vitamix is finished running, add 1 seeded red pepper cut into quarters and 1/2 tomato to the vitamix. Turn to 5 and pulse a couple of times to keep chunky.

Add the cooked lotus root, tofu and onion mix to bowls & top with hot curry soup. Add enoki mushrooms and cilantro!... you just made a delicious and fresh curry soup in less than 10 minutes, congratulations!

  1. This was so delicious! this is my first time replying to a blog so I don't know if its a faux pas to post what I did differently...., robyn tell me if it is..
    I followed the recipe except I didn't have lotus root and I wanted something to 'chunk it up' a bit. I partially cooked some sweet potato and threw them in on speed 1 after the curry was hot. I also added a little green pepper in addition to the red.


  2. It's definitely NOT faux pas! It is welcomed. I've never had sweet potato in a curry, I can't wait to try it! Also, lotus root is quite new to me, if you've never tried it you should! I found mine at an asian supermarket.
