let's make avocado pesto!

hello hello!

Recently I bought a basil plant. Now usually I don't have a green thumb, but I am dedicated to keeping this little green wonder alive and helping it grow up to be big and strong. So, I've been learning a little about pruning. It can be daunting to cut off big chunks of your beautiful plant, but it's so rewarding to see your plant sprout new leaves and grow even bigger than before! I promise.





After harvesting some basil I needed to use it up, so obviously I made pesto. Duh, right? But not just regular pesto, avocado pesto!

For avocado pesto all you need is:
  •  1 cup basil
  • 1/2 cup pine nuts
  • 1 teaspoon black pepper
  • 1 + tablespoon olive oil
  • juice of 1/2 lemon
  • 1 clove garlic
  • 1/2 an avocado

Place all the ingredients in a blender/food processor and blend until smooth and creamy. You're done! Now you can either mix it with pasta, dip some crackers in it, line some rice paper with it and make salad rolls, or just dunk your finger into this creamy wonder. Yummmmmm!
