After harvesting some basil I needed to use it up, so obviously I made pesto. Duh, right? But not just regular pesto, avocado pesto!
For avocado pesto all you need is:
- 1 cup basil
- 1/2 cup pine nuts
- 1 teaspoon black pepper
- 1 + tablespoon olive oil
- juice of 1/2 lemon
- 1 clove garlic
- 1/2 an avocado
Place all the ingredients in a blender/food processor and blend until smooth and creamy. You're done! Now you can either mix it with pasta, dip some crackers in it, line some rice paper with it and make salad rolls, or just dunk your finger into this creamy wonder. Yummmmmm!
